Unstoppable

Tomato Soup Anyone?

I'm not a big soup fan but this actually sounds good.

Fresh Tomato Soup

Ingredients
  • 2 cans vegetable broth
  • 1/2 cup chopped onion
  • 3/4 cup chopped celery
  • 1/2 tsp chopped garlic
  • 2 tablespoon thinly sliced fresh basil
  • 1 small can tomato paste
  • 2 pounds tomatoes, cut into wedges or 2 large cans organic diced tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • a few sprinkles of cayenne or red pepper flakes (a little goes a long way) :)
  • 6 tablespoons plain low-fat yogurt
  • 3 tablespoons thinly sliced fresh basil

Preparation

1. Combine celery, onion and garlic in large saucepan. Saute with a little olive oil for 3-4 min. Add broth , tomatoes, tomato paste and spices. Mix together and bring to a boil. Reduce heat, and simmer 30 minutes. Place half of tomato mixture in a blender; secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters). Blend until smooth. Be careful it will explode all over if you try to blend too much to quickly...Pour into a large bowl. Repeat procedure with remaining tomato mixture. Stir in 2 cups low fat milk or dairy of your choice.

Top each serving with 1 tablespoon yogurt and 1 1/2 teaspoons basil. Enjoy!!
